Lobsters belong to a class of animals known as the "crustaceans" which includes crabs, shrimp, and crayfish. They possess a hard, jointed external skeleton and have five pairs of legs (10 legs in all). Lobsters living along Canadian and American coasts are generally called "American lobster". Before attaining their commercial size, lobsters will be around 8 years of age and have moulted approximately 20 times.
